Oolong Tea

   Oolong, also known as “blue-green” tea, is a semi-fermented tea. Through the processes of withering, tossing, partial oxidation, fixation, rolling and roasting, an excellent quality tea is made. A good oolong has fleshy, sturdy and weighty leaves. It possesses a soft floral aroma. The taste is smooth in the throat, full-bodied, with a strong sweet tail note. The liquor is golden yellow, clear and bright. The infused leaves are green with redness round the edges. The main varieties include Anxi Tieguanyin, Wuyi Rock Tea, Feng Huang Dan Cong (Phoenix Dan Cong/Phoenix Single-Bush), Oriental Beauty, and Bai Mao Hou (White Monkey Tea).
